Building my first 750 chopper, if my motor mounts aren't moving do I need to build the frame with the motor bolted up?

I would say it should be ok to work on with the engine removed.

Depends on how much of the frame is being cut off/modified. Stock frame flexes a ton even when its whole and unaltered.
