New member with first time build

Hey guys! New member from NC. I'm a dirt bike guy, but at 53 years old I'm looking at alternatives to keep me riding! I just bought a 79 CB750 basket case. I'm so excited to build this bike into a cafe racer.
Problem is, I'm lost as a ball in tall grass. I know what I want it to look like but I don't know where to start. Right now I'm cleaning parts, checking bearings and Looking at lots of pictures. I can do some fabrication but probably will buy most stuff.
I'm curious as to where to buy seats or can they be made from the old pans. I have found tons of webpages that carry parts and accessories but I am wondering you all go.
Thanks for any information and direction.
 
I'm in a similar boat. Mine is not in boxes and runs.....just pretty rough.

I am starting with the engine. The way I see it there is no point in moving onto anything else if I can't drive it. I started with complete rebuild and calibration of the carbs and next is to replace the piston rings.
 
I am slowly piecing my bike together... Basically to get a feel of what I should look like and also to make moving it around easier.
I am going to pressure wash everything except the motor and start there with painting. I'm still undecided how far I am going into this.
Mostly I want to hear it run before I spend too much on it.
