Bike was going well, recent engine rebuild and lots of new parts. Took it out for a ride and oil light came on though level seemed okay. Now when I start it there's and engine rattle and the oil light comes on, but then both dissappear as it warms up?

So just completed an oil change, new filter new oil. Test drove it a bit. Replaced the head gasket. But when I checked the oil, it’s milky like water is in it. Does anyone have any idea what could be wrong? It’s a 1980 CB750C
