What should I be replacing while my bike's apart?

Hey y’all; long time listener, first time caller lol. I have a 1980 K series that I love with all my heart, but the last owners made some… interesting decisions regarding its paint and wiring harness. So I’m taking it apart to repaint the tank and frame.

My question is while I have it apart, is there anything I should be replacing/checking for repair? This is my first motorcycle and I am much more used to working on cars. The carbs were freshly rebuilt 3 months ago and air filter is new, but outside of that and the tires I have no idea what’s considered a wear part, so I’d appreciate any tips and pointers in the right direction

The following is generic information for all old bikes... You could replace brake lines, fuel lines, carburetor boots, etc. Basically, anything rubber that deteriorates and dry rots. You could rebuild the forks if they are leaking or need a fluid change. Maybe a brake master cylinder rebuild and replace brake pads if they are worn or contaminated with brake fluid or fork oil. You might want a new chain and sprockets if they are worn. Many things on an old bike you just replace as they need it, but I tend to be more proactive when it comes to brake systems. Inspect everything as it comes apart and order parts for when it goes back together. Check and re-grease bearings upon reassembly. You're already tackling the electrical, but now might be a good time to upgrade to blade style fuses.
