Ultrasonic Cleaning Solution & Gasket Recommendations

My wife’s heading out of town this weekend and I want to try and tackle a thorough cleaning of the carburetors on my 79 Limited Edition. I got an ultrasonic cleaner, but wondered what chemical solutions people have used in the cleaner to aid in the deep cleaning process?

Additionally, due to the age of my bike, I’m considering an engine rebuilt from the head gasket up. Any recommendations on gasket brands - I know due to age we are limited but welcome any suggestions!
 
Simple Green, can't remember the ratio I used to clean my carbs. Do a little research if you don't find any info start with mild ratio.
Main thing besides Simple Green is to use hot water in ultrasonic cleaner.
 
I preferred Simple Green Pro as the smell is far less strong. I used a 50/50 mix and it worked great for the carbs on my '78 750K. 140 degrees in my ultrasonic cleaner for 10 to 15 minutes
