Have wanted a CB-750 for years, have a 78 being dropped off tomorrow.

I've wanted a CB-750 for years now, getting a little older and am able to consistently keep the things I need around, so decided to finally get something I want. I'm having a 78 CB-750 delivered tomorrow. My main question would be, the 78 has the SOHC, but I'm seeing alot of affordable DOHC engine's available, obviously the twin cam is probably gonna make a little more power, but if it's the better choice then why are so many available compared to the SOHC my bike has. It's not the prettiest bike, but it's a runner and my gut is telling me to stick with the SOHC. Is this a good idea?
 
The DOHCs typically are in crappy shape due to the method the valves set with using shims and nobody then ever did the work. Many then burn valves. The carbs have added complexity that adds to the problems.
