Engine Temperature Values - Running HOT

Does anyone have engine temps, or know what max temp is acceptable for these engines? I'm looking for surface temps (valve cover, cylinder fins, exhaust/header connection and/or oil temps) after a decent ride or even just warmed up in the garage.

I suspect my '81 CB750 is running a little too hot. The surface of the engine seems way hotter than usual after only a light ride (10-15 min, light load, low rpm shifting, 75-80F ambient temp).

This comes after a winter tear down (piston rings, valve adjustments, carb teardown, etc.). I also removed side covers for paint, which involved removing the ignition timing mechanism, so I know timing could be the culprit. However, I feel fairly confident that it is timed correctly (at least according to the marks on the mechanism and the alignment notch in the side cover).

Any input would be greatly appreciated!
