Since Nighthawk 750s ARE 750 Fours maybe you need to diversify a bit more, and way more than one model Nighthawk 750 or 'CB750 four' out there too. Probably 30 altogether. Ride and turning can be many things to many people as well, you can get responses that driving the exact same bike would have you wondering how on earth they got there. The Nighthawks seat lower generally but even that has complications, 750 DOHC Customs are low too.

In short, you've asked for a 500 page book that solves literally nothing if you yourself are opinionated.

Lots of period bike roadtests there, they will choke you................may as well get started.

Absolutely not. You have to add the letters SOHC to differentiate. You got another whole string of DOHC bikes with the same CB moniker.

So - I get that each generation had a significant development on the previous.

Can anyone explain though how there were two CB750s in the 90s ?

The Shitehawk and the real CB750.

Oh come on !. Look at it. It looks like an indecision between a cruiser and a muscle bike.
At least the CB750 is straight out standard. The Shitehawk is watery and indecisive. Cruiser people wouldn't want it, and neither do standard people.

They were only ever used by couriers.

A "real CB750" ?? In the '90's ? What model, that's not similar to your maligned Nighthawk, are you referring to? Or are you just fishing?
The CB750 F2 and in fact the CB400SF, CB1000, CB1300 are all real CBs. The Nighthawk is like some abomination cross between a cruiser and a standard bike.

If I wanted a cruiser I'd go with the VT or CA.

Yeah, pretty much the same bike with minor differences.......Both UJM's and decent all-around bikes intended to be a compromise of sorts.

It's called evolution. Styles change, they didn't jump straight from the "bicycle with a motor" look to the "200 mph rocket bike" look without some steps in between. Look at cafe racers. They were the result of some guys in their garages trying to add some body work to maybe make the bike cut through the air faster.
Just for reference, I'm not a big fan of the "boat tail" look either. Just like I don't care for the "beak" on my kid's new (to him) Beemer, but there's a seat for everyone's ass.
When I got my first Harley, an '82 Shovelhead with the frame mounted fairing designed by Craig Vetter, a lot of HD riders thought it looked too much like a Gold Wing. Today, you can't walk 30 feet at a bike rally without tripping over 3 of what is now called a Road Glide.

CB750 also referred to as the Nighthawk was put in the 1990's market as a price buster!!!
Listed at $3995 it was a cheap model with single disk front brake and a rear drum brake in the USA - Damm we got screwed!!

over across the pond they had the CB750 F2 dual front disk brakes and single rear disk.

It's called marketing!!!
