I want to dump the 42 year old disk brakes. I want to be able to stop on a dime. New brake lines helped a bit, single piston brakes are not the best tech. Any comments about switching to a better system? Not really in love with switching front ends to get better breaking and ther is still the back end to consider.

The original rears should be more than enough to progressively lock up if in proper repair. Depending on the model, dual caliper front ends can "drop in" from such as GL1000. Dual piston setups have also been used. More important is getting the original system optimized (braided lines, well repaired MC and calipers, top-quality pads and disks). And really more important is good rubber on the road and proper technique.
