My 78 cb750 lacks power up around 65-70 mph. It has a Kerker header 4 into 1 and a k & n air filter. It has good power up to about 5000 rpms and then drops right off. Doesn't miss or backfire. I was told it was rejeted????? The bike sat for 15 years and I got it about 2 weeks ago. It starts good but is very cold blooded, the choke won't stay out just wants to slide right back in. If anyone has any ideas or thoughts/suggestions please let me know.

Have you looked into the carbs? Have you checked spark plug condition, point condition, timing, valve adjust? Start with the basics and go from there.
