Starts up, dies at low idle

Hi all - new to the forum and new to owning a motorcycle. Taking this on as a learning project. Not very mechanically savvy - at all. But between my Clymer manual, Google, Youtube and some forums I know anything is possible. I have a 1980 CB750C that starts up just fine but idles low then dies. With the choke out its fine. Without the choke, it dies. What gives? I've read a few different things - Is this a simple pilot screw adjustment? Any ideas as to what I should be doing?
 
Sounds like dirty carbs to me, specifically the pilot circuit. Adjusting the mixture screws might help, but you'll probably have to clean them anyway. Do the mixtures screws still have those caps on them? Can you ride the bike with the choke on?
